Ingredients

1 cup AP flour

½ cup semolina

¾ tsp salt

cup lukewarm water


Herbs, olive oil, and salt for topping

Directions

Mix together flour, semolina and salt. Add water, stirring with wooden spoon until mixture forms a soft dough.
Turn dough onto floured surface and knead until dough is firm, smooth, and no longer sticky.
Divide dough into 6 to 8 pieces, shape into ball and roll out into a 4 inch round. Cover with a towel and let sit for 15 minutes.
After resting roll each piece as thin as possible on a well floured board.
Bake on a stone in a 450° for 3 to 4 minutes, turn over and bake for 2 to 3 minutes more.
Spray with olive oil and sprinkle with salt and herbs.
